These banana bars were a favorite of my customers when I had
my cookie shop. We would sell them at the Farmer's Market
and always sold out. They are moist and delicious.
Preheat oven to 350.
Mix 1/2 C softened butter with
1 1/2 C sugar.
Add 2 eggs and
1 t. vanilla. Mix well.
Add and mix in 1 C sour cream
and 2 ripe bananas.
Add 1 t. soda, 1/2 t. salt and 2 C flour. Mix well.
Pour into a greased cookie sheet with edges. I line the pan with
parchment paper which makes clean up easy. The bars come
out easily and no scrubbing the pan.
Bake at 350 for 18 - 20 minutes - keep checking so you don't
Cream Cheese Frosting:
Mix together 1/2 C softened butter and 8 ou. softened cream
cheese.
Add 1 t. vanilla.
Mix in 3 3/4 - 4 C powdered sugar.
