Espresso Chocolate Chocolate Chip Cookies
Preheat oven to 350°
Cream together:
3/4 C butter
1 C brown sugar
1/2 C sugar
Add and mix:
1 egg plus 1 egg yolk
Mix together and add to mixture:
2 T espresso powder
1 t vanilla
1 T water
Mix well.
Add and mix in:
2 C flour
1/2 C cocoa
1/2 t salt
1/2 t soda
Stir in 1 C chocolate chips
Bake about 10 minutes just until the top starts to crackle. Don’t over bake. If the cookies come out flat you need a little more flour.
