Bar-B-Que, Macaroni and Cheese and Light Chocolate Brownie Cupcakes


Bar-B-Que is another one of those dishes that I just dump and go. So, I have tried to figure out what the measurements are. You should experiment and adjust to your family's likes.

2 - 3 T vinegar.

2 T mustard.

3 Large T of brown sugar.

3 - 4 C ketchup. Mix this well and thoroughly.

Brown your burger with onion and salt and pepper. This recipe was made using 4 - 5 pounds of ground beef.

Empty the cooked burger into a crock pot, mix in the ketchup mixture and simmer in the pot for a few hours. Letting it simmer is what really makes the Bar-B-Q tasty.

Macaroni and Cheese is another fly by the seat of my pants recipe.

For my family I use the full box and I like the multi grain pasta.

I always use a variety of cheeses - normally what I have in the fridge. This time I used Colby, Swiss, Parmesan and Cheddar.

Cook macaroni and drain well. Mix cheese with milk - sometimes I use evaporated milk or regular milk will work too. Add enough cheese to make it cheesy!

Place is baking dish and bake at 350 degrees for about 30 minutes.

I like to leave it in the oven until it bubbles and browns lightly.
We finished off the meal with  Light Chocolate Brownie Cupcakes. Sometimes I frost them with powdered sugar frosting, but this time I left them naked.


Melt 1 C butter.

Melt 4 ounces chocolate chips.

Mix the two together.

Add 1 3/4 C sugar with 1 t. vanilla to the chocolate mixture.

Beat in 4 eggs.

Mix in thoroughly 1 C flour.

Fill liners 1/2 full.

Bake at 350 for about 30 - 35  minutes. They will be crusty on top and softer on the inside.
