Mexican Meatloaf, Spanish Rice and Top of the Stove Cookies


This is a nice change from regular meatloaf.

My family is not a spice loving family, so you could ramp this up by adding chiles and other spices, but I will have to say this is tasty.

2 lbs. fresh ground beef.


Add a chopped onion.

Add about 1 C bread crumbs.

1 egg.

I used a 4 cheese mexican blend and a taco blend cheese mixed together. Add about 1 1/2 C.

I used medium salsa - this is where you could spice it up some. About 1 1/2 C.

Go easy on the salt - maybe 1/2 t. and pepper to your taste.

Mix together with your hands - the only and best way to mix meatloaf. Place in a baking dish and bake at 350 until done.
Turn off the oven. Sprinkle the top of the meatloaf with more cheese and put back into oven until the cheese melts.

Spanish Rice is a nice side dish.

I prefer this brand and make sure you add canned stewed tomatoes.


Add a nice side salad and the meal is complete.


Now, for dessert.

Top of the Stove Cookies.

Melt slowly over low heat so it doesn't brown - 1 stick of butter or 1/2 C.

Add 2 C sugar and 1/2 C milk.

Add 3 T cocoa.

Wisk together in the pan and heat to boiling.

Boil 1 minute. If you don't boil enough it will not set up. If you boil too much it will set up too fast and be hard.

Remove from heat and add 1/2 C peanut butter.

3 C oatmeal - I use Old Fashioned.

1 t. vanilla.

Mix thoroughly.
Lay a piece of aluminum foil out.

Drop by tablespoonsful.


Add a glass of ice cold milk and enjoy!
