Here is an easy, healthy way to use up those left over roasted vegetables.
Whisk together 2 eggs. |
Lightly saute the veggies in a little butter - basically warm them through. |
Dump the mixed egg over the veggies - salt and pepper to taste. |
Scramble until egg is done. |
Sprinkle with cheese. Cover with lid and let cheese melt. |
