Russian Fluff, Sour Cream Fruit Salad and Chocolate Cupcakes with Chocolate Frosting



This is one of my family's favorites. It's easy and I think of it more in the cooler months than summer time.
 
I altered a recipe I had to make this the way we like it, so you may find other recipes similar to this. Always take a recipe and changes to make it yours.
Preheat oven to 350.


If you sprinkle salt in the bottom of your frying pan before browning ground beef it will help keep the meat from sticking.

Add chopped onion to 1 lb. ground beef and brown. Salt and pepper to taste.

1 can stewed tomatoes.

I try to run a knife through the tomatoes to make smaller pieces.

Transfer drained, browned ground beef to a bowl and add the tomatoes.

Mix in 1/2 C instant rice - I like to use the brown - makes me feel like I am making a healthier choice.

Add one can drained green beans.

Mix in one can of tomato soup.

Just dump all together and mix.

Place in baking dish. Cover and bake 30 - 40 minutes; remove cover and bake another 10 minutes.


Sour Cream Fruit Salad

Drain well 1 can Mandarin oranges and 1 can pineapple chunks. Place in large bowl.

Add in 1 C coconut and 1 C marshmallows.

Mix in 1 C sour cream. Mix well.

 
Chocolate Cupcakes with Chocolate Frosting
 
Preheat oven to 350.
 
 
1 1/2 C sugar.

1/2 C Crisco.

 
 
Cream Crisco and Sugar - should look like this.

Add and mix in 2 eggs and 1 t. vanilla.

Mix well.

Add 2 heaping C flour, 2 t soda, 1/2 t salt and 2 t baking powder.

Add in 4 T cocoa.

Mix in the dry ingredients alternately with 1 C sour milk. See next picture for directions to make sour milk.

Pour about 3 T vinegar in the bottom of a 1 C measuring cup. Add milk to the 1 C line. The milk will curdle and look like this immediately. This is what you want to see.

Slowly add in 1 C boiling water. Start your mixer slow as this will be real sloppy.

Fill cupcakes 1/2 or a little more full.
 Frosting:
This is another hard one. I dump and mix, but this is a close guess.

Soften 1/2 C butter and mix into 2 - 3 C powdered sugar. Add in 1 t vanilla and about 3 - 4 T cocoa. Add in milk a little at a time until it reaches the consistency you desire. Mix well. Frost completely cooled cupcakes.



For the decorations I bought the eyes.

Mix  powdered sugar with a little butter, vanilla, blue food coloring and just enough milk to make a stiff consistency. Then use the tip you prefer and decorate. Do the same for the yellow or whatever color you choose.
