This is one of my family's favorites. It's easy and I think of it more in the cooler months than summer time.
I altered a recipe I had to make this the way we like it, so you may find other recipes similar to this. Always take a recipe and changes to make it yours.

Preheat oven to 350. |

If you sprinkle salt in the bottom of your frying pan before browning ground beef it will help keep the meat from sticking. |

Add chopped onion to 1 lb. ground beef and brown. Salt and pepper to taste. |

1 can stewed tomatoes. |
|
I try to run a knife through the tomatoes to make smaller pieces. |
|
Transfer drained, browned ground beef to a bowl and add the tomatoes. |

Mix in 1/2 C instant rice - I like to use the brown - makes me feel like I am making a healthier choice. |

Add one can drained green beans. |
|
Mix in one can of tomato soup. |
|
Just dump all together and mix. |
|
Place in baking dish. Cover and bake 30 - 40 minutes; remove cover and bake another 10 minutes. |
Sour Cream Fruit Salad
|
Drain well 1 can Mandarin oranges and 1 can pineapple chunks. Place in large bowl. |
|
Add in 1 C coconut and 1 C marshmallows. |
|
Mix in 1 C sour cream. Mix well. |
Chocolate Cupcakes with Chocolate Frosting
|
Preheat oven to 350. |
|
1 1/2 C sugar. |
|
1/2 C Crisco. |
|
Cream Crisco and Sugar - should look like this. |
|
Add and mix in 2 eggs and 1 t. vanilla. |
|
Mix well. |
|
Add 2 heaping C flour, 2 t soda, 1/2 t salt and 2 t baking powder. |
|
Add in 4 T cocoa. |
|
Mix in the dry ingredients alternately with 1 C sour milk. See next picture for directions to make sour milk. |

Pour about 3 T vinegar in the bottom of a 1 C measuring cup. Add milk to the 1 C line. The milk will curdle and look like this immediately. This is what you want to see. |

Slowly add in 1 C boiling water. Start your mixer slow as this will be real sloppy. |
|
Fill cupcakes 1/2 or a little more full. |
Frosting:
This is another hard one. I dump and mix, but this is a close guess.
Soften 1/2 C butter and mix into 2 - 3 C powdered sugar. Add in 1 t vanilla and about 3 - 4 T cocoa. Add in milk a little at a time until it reaches the consistency you desire. Mix well. Frost completely cooled cupcakes.
For the decorations I bought the eyes.
Mix powdered sugar with a little butter, vanilla, blue food coloring and just enough milk to make a stiff consistency. Then use the tip you prefer and decorate. Do the same for the yellow or whatever color you choose.
