These cookies are uniquely flavored because of the Amaretto
liqueur. The surprise your taste buds especially when you think
you're just getting a chocolate chip cookie.
Preheat oven to 350.
Soften one cup of butter.
Add 1 C brown sugar and 1/2 C sugar.
Cream together.
Mix in 2 eggs, 1 T Amaretto liqueur, and 1 t almond extract.
Mix well.
Add 1 t baking powder, 1 t baking soda and 1/2 t salt.
Add to the mixture 2 1/2 - 3 C flour. I usually use the full 3 cups.
Mix well.
Add and mix 2 C chocolate chips, 1 C coconut and 1/2 C
almonds. FYI - I purchase almonds in large bags at Costco and
then divide them into smaller bags and freeze them. It's less
expensive and you'll never know they were froze.
Scoop on to a cookie sheet lined with parchment paper - makes
clean up a whiz.
And, if you use a scoop the cookies are more uniform in size and
appearance.
Bake at 350 for about 10 minutes depending on your oven. As
soon as they become lightly browned take them out. Most
people over bake cookies and it makes for a hard cookie. These
are nice and chewy.
