This is a delicious recipe from my Grama Smith, my dad's mom.
Preheat oven to 350.
Soften 1/2 C butter.
Mix butter with 1/2 C sugar.
Add in 3 egg yolks and mix together. Save the whites for later.
Add and mix in 1 C flour and
1 t. baking soda and a dash of salt.
Divide in two and spread into a 9 inch cake pan that is well
greased.
Beat 4 egg whites until stiff.
Gradually add 1 C sugar to egg whites.
For some reason I had a horrible time getting the egg whites to
fluff up.
Divide the whites in two and spread on top of batter in pans.
Bake at 350 for about 18 minutes.
The meringue will be crackly and lightly browned.
Let the cakes cool while making the cream filling.
Place in sauce pan 1 C milk.
2 T sugar
1 t. vanilla and 1 T cornstarch
Add 1 egg yolk and mix together and cook until thick.
Take one cake out of pan in invert onto serving plate.
Spread cooled filling on cake. Don't spread it all the way to the outside. It will naturally spread there.
Place other cake on top.
