This cake is soooo delish! It’s a rch, heavy, creamy, dreamy chocolate explosion.
Preheat oven to 350°
Cream together:
1 C softened butter
3 C brown sugar
Add and mix:
4 eggs
2 t vanilla
Add and mix:
2 2/3 C flour
3/4 C cocoa
3 t baking soda
1/2 t salt
Mix until clumpy - it won’t be smooth because of the dry ingredients.
Add and beat in:
1 1/3 C sour cream
Add and mix well:
1 1/3 C boiling water
Make sure batter is thoroughly mixed.
Pour evenly into 3 - 9 inch cake pans that are well greased. I also line the bottom with parchment or dry waxed paper.
Bake about 30 min until inserted toothpick comes out clean. DON’T OVERBAKE
Let cool before frosting.
Frosting
I always make one and one half batches of frosting - I never want to cheat the cake out of appropriate amounts of frosting - never enough chocolate!
1/2 C butter cubed (3/4 C cubed butter)
3 oz. chopped unsweetened chocolate (4 1/2 oz.)
3 oz. chopped semisweet chocolate (4 1/2 oz) - I use chocolate chips
5 C powdered sugar (7 1/2 C)
1 C sour cream (1 1/2 C)
2 t vanilla ( 3 1/2 t)
Melt in a pan over hot water the butter and the chocolates. Stirring until smooth - cool slightly.
Mix together the sour cream, powdered sugar and vanilla. Add melted mixture and beat well until smooth.
Spread that delicious chocolate dream cream over your amazing chocolate cake.
Because there is sour cream in the frosting this needs to be refrigerated when you are not eating or gazing longingly at it.
