Preheat oven to 350°
Mix together:
2/3 C canola oil
1 C sugar
Add and mix in:
1 egg
1/4 C molasses
Mix well.
Add:
2 C flour
2 t soda
1 t cinnamon
1 t ginger
1/2 t cloves
Mix well - should have consistency of soft playdough.
Scoop and place in a shallow pan of sugar. Do a few at a time. Take the cookie scoops out of the sugar pan and flip over and place on cookie sheet - sugar side up. I gently press the cookie down. I use parchment paper on the cookie sheet - easier to clean up.
Bake at 350° for about 8 - 10 minutes. Take out when top is crackled. Do NOT overbake. Don’t bake until really brown. When they crackle they are done. Now, if you want a crunchy cookie instead of a soft cookie you can bake them a little longer.
Let them cool about 3 minutes. Pour a large glass of whole milk. Grab 2 or 3 cookies, your milk and find a quiet corner and totally enjoy. Repeat as often as necessary.
